bollito misto – a simple version- serve your mostardo from quince with this

Lesso is a simple form of bollito misto
3 kg brisket of beef
1 large onion
2 carrots
2 pieces of celery
4 bay leaves
2 tomatoes
3 parsley stalks
6 peppercorns
2 bay leaves
Place the vegetables in a casserole with 5 litres of water and bring to the boil
Place the meat in the pan and bring almost to the boil , spoon of any scum in the first 10minutes, then add the tomatoes,parsley and the peppercorns .Place a lid on the pan and allow to cook very slowly on a very low heat for 4 hours until it is cooked.
If you wish add a delicious Zampone of Cotochino sausage (available around Christmas at the Italian deli) to the pan for the last half hour or an ox tongue for the last 1 ½ hours, making it more and more like a bollitto misto
Serve with cooked vegetables e.g carrots , potatoes swedes etc
A salsa verde an Mostarda di Cremonata or a quince cremonata
Salsa verde
1 bunch of parsley
6 leaves of basil
1 bunch of mint
3 cloves of garlic
10 g capers
4 anchovies
2 tbs red wine vinegar
2 dl olive oil
salt and pepper
1. Grind the parsley, basil and mint in the pestle and mortar. It can in a food processor but the consistency is different.
2. Add the rest of the ingredients work it into a nice sauce
I plan to make this in the coming weeks
