Here is my simple recipe for Foccacia
15 g fresh yeast
3 to 3 ½ dl hand hot water, LIKE THE BABYS BATH
500g strong flour or 00 type Italian flour
60 g polenta
1 tbsp salt
½ dl olive oil
1 tbsp rosemary or thyme
1 dl olive oil
1 tbsp sea salt sea salt
Dissolve the yeast in the TEPID water
Mix the flour, polenta and salt in a bowl or in a mixer. Using the bread (hook) attachment, or your hand! Make a well in the centre of the mixture and gradually incorporate the yeast and water liquid, add a dash of olive oil, continue kneading the dough until it becomes smooth and leaves the side of the bowl clean, or your fingers. Place in a lightly oiled bowl, or on a floured surface. Cover with a slightly damp tea towel and leave to rise until double in size. Roll the dough out 30 x 25 cm
Make small hollows with the thumb at regular intervals.
Leave it to rise again
Rub lightly with the olive oil and sprinkle with the herbs and sea salt
Bake in a hot oven 200°C in ± 25 min.
