Guinea fowl Cajun style – fun for easy meals with friends

Glazed Guinea fowl or use a good chicken
2 tbsp. tamarind paste
1 tbsp. chopped garlic
3 tbsp. Corn Syrup
3 tbsp. molasses
2 tbsp. ketchup
2 tbsp. water
freshly ground black pepper
¼ tsp each of cumin, oregano, coriander
2 double guinea fowl fillets with bone
100 g mixed nuts and seeds eg.
pumpkin, pistachios, pine nuts
½-1 grilled red bell peppers
1 tsp chili powder
1 tsp ground cumin
½ tsp salt
1 el Corn Syrup
1 tsp. vinegar
1 dl olive oil
Mix the ingredients for the glaze together, use to brush the fillets. Leave to stand for 1 hour.
Pre heat the grill and grill the guinea fowl for 10 minutes, cover with foil if it becomes to brown, until cooked.
Place all the ingredients for the sauce in the food processor and process to a creamy sauce. This will keep in a cool place for a week. Cut the guinea fowl into thick tranches
Spoon the sauce onto the plates and using the back of a spoon make a pool, lay the guineau fowl slices on this
Grilled sweet potatoes
Cut the potatoes is slices brush with oil, season with salt and pepper or an herb rub and grill on both sides for 5 minutes until they begin to colour.
Or bake whole by rubbing with salt and placing in a hot oven fora bout 45 minutes depending on their size
