lobster with Fennel salad

I am of to Scotland in my camper van with Jolly my dog and two other Solo friends with their dogs

They have lobster there I believe
Serves 4
2 lobsters
250ml dry white wine
bouquet garni
2 bay leaves
6 peppercorns
fennel salad
500ml (2cups) sliced fennel
30ml butter
½ cup brunoised tomatoes
½ cup brunoised courgette
30ml (2 Tbsp) finely chopped fennel fronds
lime dressing
2 Tbsp chopped garlic ?
2 Tbsp finely grated ginger
4 Tbsp coriander root, washed, trimmed and finely chopped
2 small red chillies, seeded and chopped
3 Tbsp fish sauce
120ml lemon juice
1 tsp sugar
Cook the whole lobster in boiling water for 7 minutes. Remove and refresh in ice cold water to cool. Remove the meat from the tail and slice. Remove the meat from each claw and try to keep intact. Refrigerate till needed.
For the salad, sauté the sliced fennel in the butter for about 3 minutes. Leave to cool. Add the brunoised tomatoes, courgette and chopped fennel fronds.
Combine all the ingredients for the lime dressing, then pour the dressing over the salad and marinate for 30 minutes.
