When a chef friend and his kids said they would call in for coffee I just had to make some biscuits. fortunately I love porridge with golden Syrup in winter so I had the ingredients in house.
The oatmeal biscuits from my mother
6 dl SR flour
1 tsp bicarbonate of soda
3 dl crystal sugar
125 grams butter
2 tbsp golden syrup
1 ¼ dl milk
1 egg
6 dl oatmeal
Mix the flour, sugar, oatmeal and bicarbonate together
Place the syrup in a pan with the butter and milk and warm through until the butter is melted, cool slightly, pour onto the dry ingredients, add the egg and stir the mixture, using the hands if necessary, form into balls the size of a large walnut, place on a lightly greased baking sheet, push flat with the palm of the hand, place a glace cherry on top. In my case I used a glazed Kumquats, from my Kumquats preserve with ginger
Bake at 180 C for 15 – 20 minutes
Remove from the baking sheet with a palette knife and allow to become hard.
Store in an airtight tin.
