PEAR AND RHUBARB AMARETTI CRUMBLE
Serves 6
Crumble
200g flour
30g Amaretto cookies
115g butter
90g sugar
pinch of salt
Fruit
½ cup rhubarb, chopped
550g pears
1/3 cup sugar
2 Tbsp lemon juice
½ tsp cinnamon
1½ Tbsp water
To make the crumble place the amaretto cookies in a food processor and pulse until coarsely chopped. Set aside in a bowl.
Using the same bowl from the food processor, put all the other ingredients in and run the machine until the mixture resembles fine breadcrumbs. Mix together with the crushed amaretto.
To make the filling, place the rhubarb and pear in a saucepan over medium heat. Cover and cook stirring occasionally for 5 minutes. Stir through the sugar, lemon juice and cinnamon and simmer rapidly for 10 minutes.
Transfer to an oven dish, either 4 individual ones or one large one. Spread the crumble mixture over the fruit and give the dish a gentle shake to level it off.
Bake in a preheated oven at 180C for about 30 minutes until the top is evenly golden.
Rhubarb brulee
500g fresh rhubarb
25 g butter
juice of 1 orange
5g sugar
250g thick cream
125 g light brown sugar
Clean he rhubarb ‘
Place on a greased baking sheet
Dot with melted butter and the juice of 1orange sprinkle with the sugar and bake in the oven for 5 to 20 minutes
Cool the rhubarb and divide over 4 ramekins of a 1 litre dish
Beat the cream until holding shape , spread over the rhubarb and sprinkle with the brown sugar, use a blow torch or grill to brown the surface Serve immediately or cool in the fridge
RHUBARB CRUMBLE
Ingrediënten:
1 pond rabarber gewassen en in 5cm stukjes gesneden
50 g boter
suiker
Crumble:
150 g bloem
75 g koude boter
75 g suiker
Oven temp. 200°C
1. Laat rabarber uitlekken en zet op een bakplaat in de oven bedekt met klein klontjes boter en afgedekt met alufolie. Laat garen voor 10 – 12 minuten.
2. Doe bloem in de keuken machine en doe klontjes ijskoude boter erbij – pulse stand – kruimel. Doe in een kom en roer suiker erdoor.
3. Doe gekookte rabarber in een beboterde vorm en bedek met crumble mix. Doe in oven voor 20 minuten.
RHUBARB CRUMBLE
Ingrediënten:
1 pond rhubarb washed and cut into pieces
50 g butter
sugar
Crumble:
150 g flour
75 g cold butter
75 g sugar
Oven temp. 200°C
Wash and drain the the rhubarb well, arrange on a baking sheet and dot with butter , Cover with aluminium foil and bake for 10-12 minutes.
Rub the butter into the flour or use a food proccessor until like breadcrumbs , stir in the sugar
Place the rhubarb in a buttered pie dish sprinkle over a thick layer of the crumble mixture. Bake in the oven for 20 minuten.
