Serves 4
375g salmon fillet
4 spring onions, finely sliced diagonally
1 red chilli, deseeded and finely chopped, Remember- cut of the end at the stalk and rub in the hands to remove the seeds
3 tablespoons vodka
juice of 2 limes
2 tablespoons extra virgin olive oil
leaves from a bunch of coriander
salt and freshly ground black pepper
Put the salmon onto a board and cut it crossways into 1 cm slices. Arrange the salmon slices in overlapping layers on a large serving plate. Sprinkle with salt and freshly ground black pepper.
