My Shortbread

I have been making this for 50 years. Always a great favorite with family, friends and students
250g plain flour
175 g cold butter
75g fine sugar
1 pinch of salt
Oven 175 C
Time 35 minutes
Method
Place the flour in the Magimix, cut the butter into pieces, add with the sugar and salt to the flour.
Place on the lid and using the pulse knob, mix together. Then let the machine run until the mixture resembles breadcrumbs

Turn out onto a cold surface and bring together with your hands.

Knead lightly to a ball and cut in 2

Pat into 2 thick rounds, and pinch the edges.
Place on a baking sheet and prick with a fork. see photo at begining of recipe
Chill
Place in the oven for 35 minutes. Remove sprinkle with sugar and cut whilst warm, otherwise it breaks.
After 10 minutes lift carefully on to cooling rack. Store in an airtight tin, for as long as it lasts.!!!
If you have no food processor, then you will have to rub the fat into the flour as for pastry

Shortbread is very dry and crumbly, needs a good cuppa with it.
