how to clean a squid
Calamari ripieni
1 medium squid
2 tbs olive oil
2 cloves of garlic
50 g  fresh breadcrumbs
2 tbs fresh oregano
1 tbs chopped fennel
salt and pepper
3 tbs salsa verde
olive oil
1. Pull the body from the head and tentacles of the squid
2. Open the tentacles to reveal the beak
3. Squeeze out the beak, cut off and discard
4. Pull of the purple skin, and remove the transparent pen
5. Wash thoroughly turning it inside out if possible
6. Remove the fins and chop the fins and tentacles
7. Heat the olive oil and quickly fry the fins and tentacles together with the garlic
8. Add the breadcrumbs oregano and fennel and  season well with salt and peper.. 
9. Fill the squid using a piping bag or a teaspoon and secure with a cocktail stick
10. Preheat the grill and grill the squid on each side until golden brown .Place on a baking sheet sprinkle with a little wine, cover with foil and cook for a 10-15 minutes in a moderate oven, depending on the thickness of the calamari
11. Drain of the cooking juices and reduce to 3 tbs (if desired)
12. Add the cooking juices to the thick salsa verde and spoon a little over the calamaris, serve the rest separately.
Cut the squid into thick slices before serving
