1 Vacherin D’or
small strips of fresh garlic
1 glass or more of Champagne or Cremant or a little beer
Vegetables, I like cooked small potatoes, blanched broccoli and cauliflower, fried Cantherellen, roasted leeks or just good French Baguette.
Preheat the oven to 200 C
Place the Vacherin, without it plastic covering, on a baking sheet, make small incisions in the top of the cheese and push in the slivers of garlic. Pour over the Champagne, cremant or beer and place in the oven. Bake for 25 minutes approx until it has a golden coloured slightly croquant crust. Remove from the oven and serve as a fondue with the vegetables of your choice. Preferably before an open fire.
